Paleo Tahini Banana Bread


Recipe:

3 bananas

3 eggs

1/2 cup tahini (can sub any nut butter if preferred)

3 tbsp maple syrup

1 tsp vanilla extract

1 cup cassava flour (oat flour can also work)

2 tbsp arrowroot starch (or corn starch)

1 tsp cinnamon

1 tsp salt

1/2 tsp baking soda

1.5 tsp baking powder

1 handful of crushed walnuts (for topping)


Directions:

1. Preheat oven to 350. Grease 9x5 pan with coconut oil (or any oil).

2. Mash bananas and mix together wet ingredients

3. Add dry ingredients (baking soda and powder last) and mix together

4. Consistency should be more liquidy than doughy

5. Pour into pan and add toppings (I used crushed walnuts)

6. Put into oven for 45-55 minutes or until toothpick comes out clean and top is golden brown

7. Enjoy!
